Wix-Fresh™ Max

Function: Improves meat products’ natural flavor and color.

  • Extends the shelf life of fresh, frozen, pre-cooked and further
    processed meats
  • Masks off-notes in meat applications, including soy
  • Preserves the flavor intensity of spice notes
  • Reduces warmed-over flavor in meats that are pre-cooked, refrigerated, or frozen and then reheated prior to consumption
  • Stabilizes the breading system in deep-fried applications by reducing the rancidity associated with frying oil while enhancing overall flavor
  • Suggested applications: fresh, frozen, pre-cooked, further processed meats, deep fat fried breading systems.

Wix-Fresh™ Mimic

Function: Reduces off-notes associated with listeria growth inhibitors

The USDA suggests the use of acetates, diacetates and lactates to help ensure meat safety. But the off-notes associated with these listeria growth inhibitors present flavor challenges. Wix-Fresh Mimic balances safety with taste

  • Reduces off-notes associated with acetates, lactates and diacetates
  • Masks potassium chloride

  • Suggested applications: fresh, frozen, pre-cooked, further processed meats containing potassium and functional listeria inhibitors.

Function: Masks off notes associated with listeria inhibitors with the benefit of antioxidant

Function: Reduces metallic notes in imported meats

  • Suggested applications: further processed fresh, frozen and pre-cooked meats
