Wixon offers two new families of beef flavors: rare beef and brown roast beef. Both families consist of reaction-based flavors that are available in liquid and spray-dried forms.
Liquid versions should be warmed slightly for best results and ease of use. Spray-dried forms are non-caking, easy-to-use powders.
Natural rare beef-type
The first family of flavors consists of WO1517, Natural Beef-type liquid, and WO2390, Natural Beef-type (spray-dried).
These impart a rare beef character to products. The profile resembles rare prime rib, or the center cut of a roast with a slightly "red, juicy" note.
Natural/WONF roast beef
The second flavor group delivers an oven-browned roast beef or browned gravy profile that is best characterized by the end cut of roast beef, with its browned, crisp beef-fat notes.
This family includes the basic reaction Beef WONF (WO2394 and WO2392, dry), plus a Compounded Beef WONF (WO2395 and WO2391, dry), and a liquid version which contains no MSG (Beef WONF, WO2396, liquid).
